Speedy Golden Coconut Dahl

If you're craving something warm, comforting, and packed with flavor—but don’t have hours to spend in the kitchen—this Speedy Golden Coconut Dahl is your perfect go-to meal. Ready in just 20 minutes, this creamy, spiced dish is loaded with protein-rich lentils, fragrant spices, and velvety coconut milk. It’s the ultimate balance of nourishment and indulgence, perfect for a quick weeknight dinner or meal prep. Serve it with rice, naan, or enjoy it on its own for a satisfying, wholesome bowl of goodness. Simple ingredients, bold flavors, and minimal effort—what’s not to love?

INGREDIENTS​

  • 1 tbsp olive oil/coconut oil

  • 3 tsp garam masala

  • 2 tsp turmeric

  • 1 tsp chilli

  • 1 x 300g tin green lentils, drained and rinsed

  • 1 x 400g tin chopped tomatoes

  • 1 x 400ml tin coconut milk

  • salt and pepper

  • A handful of frozen spinach

  • 2 tbsp fresh coriander, finely chopped

 

METHOD

  • Heat the olive oil/ coconut oil in a large pan for about a minute, then stir in the spices and cook for another minute or two until fragrant and golden. Add the drained lentils, coconut milk, and chopped tomatoes, then cover and let it simmer for about 20 minutes, stirring occasionally. If it starts to thicken too much, add a splash of water as needed.

  • Once done add in the spinach, remove from the heat, season with salt and pepper, and stir in the fresh coriander. Serve hot and enjoy!
