GREEN GODDESS PIE
Introducing the Green Goddess Pie, a nutrient-packed delight that brings the power of phytoestrogen-rich foods to your plate! INGREDIENTS
For the filling:

900g frozen spinach drained and squeezed to remove water

2 small courgettes grated

Handful of fresh herbs of your choice

700g butterbeans or cannolini beans drained (I like the ones from bold bean company)

1 tsp salt and ground pepper

150g or block of feta
-
2 cloves of garlic finley chopped

Olive oil for sautéing

1 free range egg
-
Pack of filo pastry

25-30g melted butter
METHOD
1. Begin by sautéing the garlic in the olive oil for a few minutes, then add the grated courgette and sauté for a further 5 minutes Then add the spinach and the butterbeans, stir and season well. Once everything has cooked down, set aside to cool. Once cool add in the egg and crumble the feta into the mix and mix.
2. Preheat the Oven:
Preheat your oven to 180°C (350°F).
3. Make the Pie
Open the pack of filo but ensure that this is kept under a damp tea towel while you work making the pie. Coat a 9 inch spring cake tin in melted butter using a brush, then gently build your filo layers, buttering well in-between and over, approximately 6 layers in and around the cake tin. Make sure there is some filo left left hanging over the edges. I find it best to work round in a clockwise fashion. Next add half the filling and spread out, then add on top two layers of filo, you may need to scrunch these to fit them in. Then add in the rest of the filling. Cover with more buttered filo sheets, 4/5 and then fold over the filo that has been left over the sides of the cake tin, butter well and add 1-2 more on top with extra butter on top.
4. Bake the pie
Bake on the middle shelf for 20-25 minutes or until golden brown.

Allow the pie to cool slightly before slicing and serving. Enjoy this green goddess pie warm or at room temperature, accompanied by a crisp green salad for a delicious and hormone happy meal!
