CHOCOLATE AND PEANUT COOKIES
 
A sweet treat can be eaten as part of a balanced diet, these peanut and chocolate cookies are delicious served warm.  Use a wholemeal or spelt flour for extra fiber.

INGREDIENTS

  • 140g soft butter

  • 100g soft brown sugar

  • 100g caster sugar.

  • 125g pure (crunchy) peanut butter

  • 1 large free-range egg

  • 250g wholewheat/spelt flour

  • 125g dark chocolate chopped into chunks

  • 1/2 tsp bicarb

  • 1/2 tsp baking powder

METHOD

​

  1. Preheat the oven to 170c or gas mark 3.Line a baking tray with grease proof paper.

  2. Beat the butter and sugar together until combined.

  3. Stir in the egg and peanut butter.

  4. Add the flour and raising agents. Mix well.

  5. Add the chocolate chunks. 

  6. Use a ice-cream scoop or tablespoon to creat balls of dough, gently press down leaving space for the cookies to expand.

  7. Bake the cookies for 12 minutes.

  8. Leave to cool for 10 minutes (if you can wait) before eating.
