INGREDIENTS

1 medium whole cauliflower (about 1.5–2 lbs), leaves removed

1 cup cottage cheese

1/2 cup shredded cheddar cheese (plus extra for topping)

1/4 cup grated Parmesan cheese

1/2 cup plain Greek yogurt (or sour cream)

1 clove garlic, minced

1 tsp Dijon mustard

1/2 tsp ground black pepper

1/2 tsp salt

1 tbsp olive oil

Fresh rosemary
METHOD

Prepare the Cauliflower:

Preheat your oven to 375°F (190°C).

Bring a large pot of salted water to a boil.

Place the whole cauliflower in the boiling water and cook for 6–8 minutes until slightly tender but still firm. Drain well and set aside.

Make the Cheese Sauce:

In a blender or food processor, combine the cottage cheese, Greek yogurt, cheddar cheese, Parmesan, garlic, Dijon mustard, rosemary, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.

Place the cauliflower on a baking dish lined with parchment paper or lightly greased.

Drizzle the cauliflower with olive oil and brush evenly to coat.
